Butter Bean And Pork Stew

A delicious thick butter bean and pork stew full of warm flavours; paprika, peppers and leek is typical of the Basque region of northern France and Spain. This delicious hearty stew is a wonderful filling wholesome meal that takes less than an hour to cook and you only use one pot, saving time on the washing up.

If you and your family have a hectic schedule this is a fabulous recipe that you can sit down and enjoy together.  You only spend 15 minutes cooking at the beginning and leave it to simmer for 45 minutes, stirring occasionally, so you can go put your feet up and relax with a glass of white wine while you are waiting. If you’re only cooking for two or just for yourself, stew is always better the next day, the left over’s will be delicious and definatly won’t go to waste.

Ingredients

  • 400g canned butter beans
  • 1 tin chopped tomatoes
  • 1 tbsp paprika
  • 500g boneless pork, cut into small pieces
  • 100ml vegetable stock
  • 75ml dry white wine
  • 1 leek
  • 1 red pepper
  • 1 tbsp olive oil

Method

  1. Heat the olive oil in a saucepan on a medium heat, gently fry the leeks and pepper until soft and add the pork, fry for about 5 minutes and season with paprika.
  2. Add the wine, simmer and reduce then add the stock.
  3. Add the beans and tomatoes; simmer for 45 minutes stirring occasionally.
