Ham And Poached Egg Salad

A wonderful warm salad great for a light lunch or side dish, but also makes a healthy filling breakfast. Eggs and ham is perfect breakfast food, and if you are trying to be healthy, poached egg is a wonderful alternative to the typical fried egg for breakfast.
A large fragrant salad full of rocket and basil will keep you feeling fresh and full until lunch while being healthy and low fat. A perfect start to the day.
Ingredients
- 2 eggs
- 4 slices of ham, chopped
- Balsamic vinegar
- ½ lemon
- 1 tbsp olive oil
- Handful basil
- 250g rocket
- 1 shallot, finely sliced
Method
- Mix the olive oil, lemon juice and balsamic vinegar together.
- Toss the shallots, basil, rocket and ham together, divide onto two plates.
- Poach the two eggs, when done place one on each plate on top of the salad and drizzle the dressing on top.
