Pea Soup

Pea soup is a fresh, smooth and delicious lunch or a perfect starter. It is simple and takes no more than 15 minutes to make, so great for when you are in a hurry. Pea soup can be served cold or hot, in summer a cold refreshing pea soup makes a delicious lunch to cool down with. In winter peas may be out of season but frozen peas work equally as well, perfect for a creamy luxurious hot pea soup to warm up with.
Ingredients
- 450g peas
- 1 litre vegetable stock
- 30g butter
- 30g flour
- ½ onion, chopped
- 150ml cream
- Salt and pepper
Method
- In a sauce pan melt the butter and gently fry the onions.
- Add the stock and bring to a boil.
- Add the peas and salt and pepper to taste. Cook for a couple of minutes until peas are tender.
- Remove from heat add the cream, blend the soup until smooth.
- Reheat to serve warm or chill to serve cold.
