Pesto Mash Potato

Serves 4-6

Creamy mash is a simple delicious side dish, which goes with so many dishes. To make mash potatoes a little extra special try adding some pesto. Pesto mash potatoes tastes delicious; pesto is already a perfect combination of flavours and there are so many varieties of pesto to choose from.

Pesto mash potatoes go perfectly with fish or meat balls and are great for simple rustic meals.

Ingredients

• 6 medium potatoes, peeled and chopped
• 2 tbsp butter
• 100ml milk
• 2 tbsp pesto

Method

1. Boil the potatoes in a saucepan of water.  When the potatoes are tender, drain off the water.
2. Mash the potatoes adding the butter, milk and pesto. Mash until smooth.
