Pimm’s and lemonade is a wonderful fruit filled cocktail, perfect for a picnic or a BBQ on a lazy summer’s afternoon. Pimm’s and lemonade works fantastically well as a fresh tasty jelly dessert, for a playful dinner party or a special treat before a girly night out on the town.
Pimm’s jelly looks beautiful as well as tastes delicious, it is a fun fruit salad of strawberries, oranges, mint and cucumber, set in a delicious pimm’s and lemonade jelly. Serve in a wine glass or a champagne flute for a very elegant looking dessert.
Ingredients
- 200ml Pimm’s
- 400ml lemonade
- 100ml water
- 4 gelatine leaves
- 40g sugar
- 1 lemon
- 12 slices of cucumber
- 18 mint leaves
- 2 oranges, peeled, cut, deseeded
- 6 strawberries
Method
- Soak the gelatine in a bowl of cold water.
- In a saucepan boil the 100ml water and add the sugar, stir until it has dissolved.
- Squeeze any excess liquid of the gelatine and add gelatine to the boiling water, stir until it has dissolved.
- Take off the heat and add the lemonade, then the pimm’s. Squeeze in the lemon and stir well. Leave to cool to room temperature.
- Pour half the jelly into 6 glasses and divide half the fruit into the 6 glasses. Place glasses in the fridge and let them set for 2 hours.
- Pour the remaining jelly into the 6 glasses and place the remaining fruit into them.
