These cute little tarts are delicious, bite size pastries topped with a sticky sweet pineapple jam; they make for a very yummy snack. Pineapple tarts are a perfect treat to keep stashed away in the biscuit tin ready for when guest pop round.
Pineapple tarts are popular throughout South East Asia and are a festive cookie often made and eaten for Chinese New Year’s. These special festive treats are wonderful all year round and children love the sweet pineapple flavours.
Ingredients
For the pineapple topping
- 250g grated pineapple, canned or fresh
- 150g sugar
- 1 tbsp lemon juice
For the pastry
- 100g butter
- 150g plain flour
- 40g icing sugar
- 2 tbsp milk powder
- 1 egg yolk
- Pinch of salt
Method
- In a sauce pan cook all the topping ingredients together, stirring occasionally. The jam is ready when it becomes sticky and dry, this should take about 1 hour.
- Preheat the oven to 180C.
- Sift the flour into a bowl and rub in the butter, salt, sugar and milk powder until it becomes like bread crumbs.
- Crack the egg in and fold to form a smooth dough. If the dough is too dry add a little bit of milk or water.
- Leave the dough to rest for 30 minutes.
- Roll out the dough to about 5mm thick, and then use a small cookie cutter to cut the dough.
- Place on a greased baking tray then add a little jam to the centre of each biscuit.
- Bake for 10 to 20 minutes depending on the size of your biscuits.
