Rocky Road Truffles

Rocky road is the ultimate in sweet chocolaty desserts, when made into a chocolate truffle it is heaven. These little smooth creamy chocolates truffles are filled with sweetie goodness, chewy, fluffy, soft marshmallows, creamy rich fudge pieces and sweet glazed cherries.
A perfect treat for anyone with a sweet tooth. Ideal for an after dinner treat or a little homemade gift. Rocky road truffles are very easy to make and a great recipe to do with children, rolling and shaping the truffles are particularly satisfying, messy and fun. Rocky road truffles are a wonderful, tasty project to do during the school holidays.
Ingredient
- 200g chocolate
- 95g double cream
- 20g butter
- 50g glazed cherries, chopped
- 25g marshmallows, chopped
- 30g Fudge, chopped
For decoration (optional)
- Sprinkles
- Icing sugar
- Chopped nuts
Method
- Melt the cream and sugar in a heat proof bowl over a saucepan of simmering water. When melted, remove from the heat and add the chocolate. Stir the chocolate in until it has melted.
- Allow to cool a little, so the fudge won’t melt. While cooling chop the other ingredients, it is easier to use scissors instead of a knife for the marshmallows.
- Mix the marshmallows, cherries and fudge into the chocolate and cream mixture.
- Refrigerate until nearly set, then shape into small balls, roll in sprinkles or another topping to decorate, then leave the chill.
