Scrambled Egg Pita

Pita bread filled with scrambled eggs and pepper is a delicious quick and easy breakfast or snack. Light and fluffy scrambled eggs are very simple but delicious and make for a perfect start to a day, add in some sweet crispy bell peppers and pita bread for a complete well rounded nutritious meal.
Ingredients
- 2 large eggs
- 1 tbsp butter
- 1 tbsp milk
- Pinch of salt and pepper
- 2 pita whole grain pockets
- 1 red bell pepper, chopped
Method
- Gently fry the peppers. Remove from the pan with a slotted spoon.
- Beat the eggs, milk, salt and pepper together.
- Then melt the butter in a pan and add the egg mixture.
- When the egg is just starting to set gently stir.
- Cook until eggs are softly set, but not over cooked.
- Fill the pita pockets with scrambled egg and pepper.
