Semifreddo With Nougat

Semifreddos are classic Italian deserts. A semifreddo is any type of half frozen Italian dessert, ice cream cake, semi-frozen yoghurt or gelato. This recipe is for a wonderfully delicious creamy amaretto and nougat flavoured semifreddo, but for those of you who aren’t amaretto fans, rum taste great too, or if you want to create a simple clean but delicious flavour you can leave out the alcohol.
Semifreddo is a wonderful elegant dessert perfect for cooling down on a long hot summer’s day, so if you are not on holiday this year, make the most of your garden, sit out in the sun. Relax with a delicious glass of wine and imagine you are in a cute little Italian restaurant next to a beautiful crystal blue lake enjoying your delicious mouth watering semifreddo with nougat.
Ingredients
- 2 eggs, separated
- 2 tbsp caster sugar
- 250ml double cream, whisked
- 2 tbsp amaretto
- 200g nougat, broken into small pieces
Method
- Line 4 ramekins or small glasses with cling film.
- Whisk the egg yolks and sugar together until pale and fluffy.
- Fold in the whisked cream and amaretto.
- Fold in the broken nougat.
- Whisk the egg whites until stiff, then add the mix.
- Pour the mixture into the lined glasses and freeze for at least 3 hours.
- Remove from the freezer 15 minutes before serving, tip onto a plate and remove the cling film.
