Summer Pudding

Summer pudding is a delicious easy dessert that makes the most of summer berries. If you take a trip to the countryside and pick your own berries or have a few raspberries and strawberries growing in your back garden then this is a very cheap dessert to make, the main ingredients are berries and bread.
This is a wonderful family dessert, perfect after a BBQ when the whole family are round and great to cool down with on a hot summer’s day.
Ingredients
- 900g soft fruit
- 200g sugar
- 2 tbsp water
- 8 slices of bread
Method
- Place the fruit in a pan, pour in the sugar and add the water.
- Place the pan over a moderate heat and bring to the boil. Allow to simmer until juices begin to run.
- Line a pudding basin with slices of bread.
- Pour the fruit and some juice into the bread lined basin, then cover the top with bread. Pour the remaining juice over the top.
- Place a sauce pan on top of the bread and add weights into the pan, leave to cool then refrigerate overnight.
- When ready to serve remove the weights and carefully sliced a knife around the edge of the pudding basin, turn out on to a serving dish.
