why is it on war memorials the dates 1914-1919 appear when the war ended in 1918

I don't think I have ever noticed that!
Because the Treaty of Versailles was signed in 1919.

because when the war ended the soldiers couldn't get home immediately and some of the injured didn't die for months later
Many Regiments where left in battle areas to clear up, this lead to many being killed by bombs which had not gone off. this work is still carrying on to this date, and the the loss of life carries on.
