Accourding to Wikipedia, it is old english, from the word 'stoc' meaning 'dependent farmstead, secondary settlement'.

What about stoke as in stoking a boiler, ie putting more wood/ coal in?

Stoke is a Saxon word meaning a "daughter" settlement.
