Blue or red-fleshed potato recipes?
I have just dug up my coloured potatoes - Vitelotte (blue flesh), Salad Blue (blue / purple flesh) and Duke of Burgundy (red flesh). Can someone recommend a recipe and / or what would be good to eat with them? There's only enough for a couple of meals for each type so would like something memorable! I tried this question in the food topic, but as you can rarely buy them in the shops, I don't think many people have come across them. Thanks.
