Growing peppers for the first time. Should I prick out side shoots like we do for tomatoes pse?

No, there's no need to do this. Eventually the side shoots should start bearing extra flowers and fruit of their own. If the plant gets too tall it may start toppling over with the weight of the peppers at a later stage so you may want to put it into a bigger pot or put a cane in the pot and tie it to that. But be sure to put a protective cover over the top of the cane to prevent you poking your eye out when you bend over to inspect your plant!
