I have grown some lovely tasting Basil, however slugs have attacked and it looks ravaged. I have removed the ones I found and put down slug pellets however should I now cut back the plants to allow them to regrow or leave them ravaged as they are? I am gutted.

Not sure how you treat the plants but if there are some leaves left on each stem they might recover. To avoid future slug attacks try boiling a sliced whole head of garlic up in a couple of pints of water - leave to steep overnight then add a tablespoon full to a watering can full of water and water anything you want to keep slugs off - it works and its not fullof nasty chemicals that hurt wildlife. Repeat after rain. Works great for lettuce and hostas and most things....the garlicy smell wears off overnight but still seeems to rpel slugs etc for days.
