Winter-type vegs

I have 3 x 1mtr garden grow bags where the summer-grown veggies are all but finished. What can I use them for during the winter please? Might I also ask, not only for the generic word e.g. carrot, but also the name of the recommended seed please, just so I know what to look/ask for!

Winter density lettuces if you can give the bags some protection, you'd stll just about get a crop of mixed salad leaves or sow some peas for peashoots
Why not try some parsnips... if you can get them started before a freeze, they do well. Don't be hasty in pulling them up though... they'll make big tops fairly quickly but take forever to grow the root. Really good in a winter's beef stew.
You can store them by pulling them, washing lightly and the dipping quickly in melted parrafin...
