I've been asked to shop around for cheaper gas and electric at work. Do I have to let them know that we are a commercial premises? My boss doesn't think you do but I'm not so sure.

Commercial premises are charged at a different rate. Same for telephones, internet etc
Yes - there is a fundamental difference for utility contracts for business and domestic properties.
Depending on scale and requirements of your business usage depends on the options and how you might try and solve this - give us an idea of the annual expenditure on utilities and I (or someone else) may be able to point you in the right direction.
There is a whole industry of energy advisors out there who make a living out of this - I am not one of them but I used an organisation 6 months ago to cut costs for a client.
