Which is better please - 2 undercoats and 1 gloss, or 1 undercoat and 2 gloss ?

If you want the 2 coats of 1 of them, then with me it would be the 2 undercoats with a light sanding between each coat. Make sure you prepare well as the finish will only be as good as the prep work and for that extra smooth finish after final sanding give it a wipe over with a tack cloth before applying the finish coat.

Depends on the quality of the paint (and colour).
I good clean with sugar soap, I undercoat, if needed one top coat of gloss job done !
It depends if you are trying to change the colour from dark to light?

Totally agree with the shedman, always gone down this path in the past.
