Further to my question, the trim in my bathroom was new last year, along with the entire bathroom. No one in the house smokes.

if you want a finish that is less prone to yellowing it really is worth paying extra to buy a top quality gloss that all the big name paint manufacturers offer.
Yes, I'm inclined to agree that cheap white paint has a tendency to go yellow more quickly and it's best to use a branded name. In my experience old paint can also have the same effect. Did you use an old half-used tin which had been sitting for years on a garage shelf?
If you used a good quality branded paint I'd be inclined to contact the manufacturers just in case it was a dodgy batch.
