Rose Hips. When are they ready for harvesting?

I have just acquired access to a piece of ground containing a 60 yard rose bush plantation. The hips have formed on most of the bushes, but how do I tell when they are ready for picking?

Wait until after a good frost... they will turn red, indicating the appropriate time for harvest. Allow them to dry out , preferably in a sunny place and remove the seeds after the skins shrivel. They can, then, be stored for quite a long time...

Many thanks for that, Clanad. Oddly enough, I was going to buy some hips a while ago and now I have more than you could throw a stick at! An embarrassment of riches, so to speak.
