After probate, how do you change the name on the deeds of a house, without paying for a solicitor?

You need to make an Assent. Usual form is called AS1 but it may not always be the appropriate one. Once completed, it needs to be sent for registration with form SDLT 60 and HM Land Registry scale 2 fee. If it's leasehold, also serve Notice on freehold reversioner.
NOTE: the above supposes a property in England/Wales and already registered.
