We've got a steel mains pipe going through the walls and floors up to the loft-it is noisy when filling the tank-If you're pipes are steel, I think the water gradually reacts with the metal, contricting the pipe and causing the noise. If it's just a few pipes and it's really bad-consider having them replaced with copper ones.
