well I grow mine in a tub and I just put the tub under cover so it dires off, and pull off all the foliage when it dies and store the whole thing in the cool and the dry till spring. If you grow thenm in the garden, lift when they start to wither or wait for the first frost to blacken the leaves, then dig up, clean off the soil, cut off all the leaves and stems and bury in peat or sand that is almost bone dry, store in a cool place till spring, do not wrap in plastic oe condensation will form and rot the tubers. (or toss the lot and buy new ones in Woolies)
sorry, typos, I meant "dries off" and "do not wrap in plastic or condensation will form"
