Can anyone recommend easy-care plants, which I could put in the garden of my house, which I am going to let out over the next two years.  I don't want to leave empty flower beds, but at the same time I don't want to end up with a jungle to hack through when we come back.

Try Hardy Geranimums ( Cranesbills) they come in hundreds of varieties tall and short , wonderful ground cover, not fussed about soil , and are low maintenance.
