We are digging up a fir tree in the garden. It was cut down and root out applied about 3 months ago, so we are now trying to get most of the roots and stump up. Some of the roots go down 3 feet plus, or run about a foot deep for godknows how long. If we were to saw them from the main stump and leave them, will they grow back? Any help appreciated before we end up digging our way to Australia.

The roots probably won't grow back but some roots of trees can develop a life of their own. Even if they don't regrow they could take many years to completely rot and disintegrate. It depends what else you plan to grow on the site. If you're worried contact a Tree Surgeon and get some professional advice.
We had this problem and dug out as much as we could with a lot of effort. We then planted a shrub on the site. It took a couple of years to start to grow, but now is thriving. The fir tree roots didn't grow at all.
we had this same problem rocky - when we moved into our bungalow 3 years ago, the garden had 4 large (and I mean large) trees in it. Mr. Den cut them down one by one and dug out the last stump last summer. He just cut through the remaining roots that went into next doors garden. We have'nt had any problems with regrowth etc.

I think what you are doing is the way to go, unless you get tree surgeons in and they cost an arm and a leg !!

One of our stumps was so big, it took Mr. Den and 5 neighbours to lift it out of the hole.
