It kinda depends on how burnt out you may be after a full season of gardening. It neither hurts nor especially helps Hostas' to have the leaves and spent scapes trimmed flush with the ground in the fall or as soon as they become unattractive. But, if you leave (no pun intended) until spring, they'll all begon anyway. If you experience repeated thawing and re-freezing in your winters (we're in the western U.S.) you would probably want to mulch them in the late fall to prevent root damage...
