why would you want to?

Hide their posts so you can't see them? If you hover over one of their posts a little down arrow will come up in the top right hand corner with options there.

Or do you mean hiding your friends list from other friends or generally? For the latter, click on the down arrow at the top right of the screen on your Facebook, select privacy settings and you can control all sorts from there.
