what does a microwave oven actually do differently during the defrost setting? (change in temperature, microwaves etc etc)

In normal use, the microwave is heating the food continuously for however long you've set the timer. In defrosting, it heats the frozen food for only a few seconds, then lets it rest for a while before repeating the process. In this way, the food is warmed gently all the way through without being cooked, (Hopefully!)
