Half british baby born in spain to married parents - dual citizenship?

I'm married to a spanish girl (we live in spain - and we married in spain last year).
In a couple of months she's going to have our first baby.
I'd love to get him dual-citizenship, but I know it's a little complicated and there's a specific way of getting it which has to be followed.
My understanding is that Spain doesn't allow dual citizenship, but that the UK doesn't really care.
I've been told that my best way of achieving this would be to do the spanish citizenship first, immediately after he's born. Then, when that's done and dusted, I apply for UK citizenship for him through the embassy in madrid.
Any other thoughts or suggestions?
