How do they work & how can they come on by themselves??

It'll most likely being able to detect your hand because of the capacitive change effect it has on the circuit, when it is in close proximity.

Coming on by itself seems a failure, isn't it ?
they work by identifying a change in the power flow...like an RCD circuit breaker...I guess that dust, especially if it has a metallic content, might do the same thing
