My daughter most likely will not get a place in a Uni starting this Sept. What other options does she have to take a degree in?

If it's OT she really wants to do, then I'd strongly recommend she doesn't give up. If she is unsuccesful, there's always the option of going through UCAS Extra or Clearing to try and get a place.
If she still doesn't manage to get a place, then it might be worth her trying to find some work experience for a while to strengthen her application and then apply again in September.
Undertaking a degree is hard work at the best of times, but if she's studying something her heart isn't in then she may well not stick to it. Surely it would be best for her to wait a bit and study something she's truly passionate about?
If she's determined to go to University now, though, then a general Health related course may be a good idea so that she can keep her options open for further training; something like Health & Social Care or Health Science?
The best of luck to her, whatever she decides to do.
