Being put in a group and given a topic to discuss to see how well you listen and communicate as well as taking on board what others say.
Being put in a group and given a specific task: to test teamwork, co-operation and to see what type of role you take on - team leader, deputy etc. Also to assess what contribution you make.
Being given some theoretically relaxed time to meet those you'd be working with, have a coffee, have a chat with your fellow candidates etc: You are likely to have current employees there for this who are highly likely to be providing feedback on who they feel would fit in well. So check you're friendly and enthused about the job at all times.
Being shown round the workplace: A friend of mine recently had an interview where they were put in a minibus and given a tour of the area that their work would cover. Some asked questions and showed interest. Another candidate used this time to make a couple of phone calls on his mobile and send texts. At the end of the trip he was told not to come back for the afternoon session.
Basically assume that you are being constantly assessed all through the session and put your best face on anything they give you...
