How about doing some work experience for a company you would really love to work for some day? It would look great on your CV and they may actually offer youa job at the end of it?!
what about charity work? Years and years ago I helped out at Barnardos Summer Playscheme. I think I got my expenses and lunch, I learned lots and felt I was helping out- it also looked good on my CV can't remember how old i was- think i was about 17. I think it was only for 6 weeks though

any kind of voluntary work looks great on your cv and will be a real boost to a uni application ina coupleof years.

i did voluntary work at my local hospital 2 days a week, and loved it.

alternatively think of what career you would like and try and get a couple of weeks work experience - you don't want to spend your entire break working!

The National Trust' organises 'working holidays' all over the country and there is a vast amount of different type of 'projects' available.

i did one in worcester a few years ago - we helped to rebuild a stone wall around a stately home. ok it doesn't sound great, but it really was a lot of fun. there are others such as helping kids groups or countryside clearup type projects to. take a look at  http://www.nationaltrust.org.uk/volunteering/workinghols.asp
