I've seen plenty of jobs advertised by the big bookmakers and, generally, the pay seems terrible. Even management posts (around here in East Anglia) don't pay a great deal more than the national minimum wage.

As examples of pay levels, see these ads:

1. Deputy betting shop manager. (Starting at 5.77 per hour, rising to 6.50 per hour, in Grimsby):

2. Deputy betting shop manager. (18000p.a., in Harlesdon, London):

Also take a look at the hours in that second ad. They're 40 hours per week, over any 5 days, between 0830 and 2200. Betting shops are always open on Saturdays, and often open on Sundays. Frequently they open until well into the evening. So employees are working 'unsocial hours' for fairly low pay.

Oops! Sorry, those links seem to 'time out', so they won't work. However, the essential information about pay (and unsocial hours) is given in my post, above, anyway.

I worked for a betting shop for several years and I absolutely do not recommend it.

As Buenchico says the pay is lousy, the hours are really horrific, you often end up single manning shops and they are often badly run. Staff are more often than not ignored unless money goes missing.

I've known staff to have to work with the most horrendous smell out back. It really is all about the money. It was even frowned on a few years back to be part of a union.

Personally I can't recommend it at all but maybe someone else has had a better experience.
Only consider working in a bookies if you want to work 12 hours a day 6 days a week. If you work for the bigger companies they will only pay you a salary thus any overtime you do will result in a lieu day. Do not bother working for any bookies, they reat you like rubbish!
