If an organisation employs staff for a two month period or longer for full-time work at monthly-paid rates, should the employees also be eligible for holiday pay at the end of the contract?

yes you would accrue holiday as in terms of the contract, if none is taken then it should be paid in final wage
this may help you - remember that bank hols can count as part of your holiday entitlement esp if you are a temp worker
