First of all without getting into a very long story - I was told that if a person that I choose to be the executor of my will - that that executor can NOT receive money from the will or be mentioned in the will - ie gets nothing. Thanks for any help.

Just keep the two things entirely separate (as if the beneficiary and the executor were separate people). So, for example, start the will thus:
"This is the Last Will and Testament of me, Connie Mara, of 16 Albert Road, Enniskillen in the County of Fermanagh.
I hereby revoke all former Wills and testamentary dispositions made by me.
I appoint Jane Bradshaw, of 28 Burns Road, Enniskillen in the County of Fermanagh and Martin Dalhide of Flat 2, 26b Cork Road, Enniskillen in the County of Fermanagh as the Executors and Trustees of this Will"
Then later on in the will, write something like this:
"I leave half of the net value of my estate to Jane Bradshaw, of 28 Burns Road, Enniskillen in the County of Fermanagh"
(There really ought to be a lot more explanation, before that, as to how the estate is to be collected in by your executors, such as by the sale of all your property, but I'm trying to simplify things quite a lot here).
