If someone has been told by a solicitor they are a beneficiary when a cousin has died intestate, but unfortunately they die before the estate has been finalised, what happens to their share does it pass to their next of kin or is it distributed among the other beneficiaries.

The inheritance is theirs, so it will be distributed according to their own will.
Yes as above It will be as if they died with it and will be handled according to their will or the rules of intestacy if no will.
