Can a solicitor legally add interest to an invoice (probate) because it remained unpaid because of the length of time taken for probate payout?

I would think so if it was included in the contractual terms/service agreement.

you will have agree a contract for services ( he applies for probate) and the terms may contain an interest section

in which case he can.
