can employers cancel an employees holiday entitlement from the previous year as the employee was off sick that previous year and was unable to take the holiday entitlement?

yes,i believe they can,my wifes works holiday year runs from 1st april till 31st march,any untaken holiday after, is not allowed to be taken in the next calendar year
I have had this problem myself and was given the leave to tie over to the next year or at least pay you for it as it is a legal entitlment to have leave.
If you were lucky enough to have been on full pay as sick pay then there is probably nothing that can be done. If not, then what I think should have happened is that you should have been paid full pay in lieu of holiday pay for the number of sick days that you were entitled to holiday.

You should see an employment adviser (local CAB), or ring ACAS helpline.
