I love tartare sause too..
If you ever cook fried fish & chips at home using groundnut oil makes a huge difference to the flavour - (make sure no one is alergic to nuts though!). It is also fantastic for roasting potatoes.
Some products are disappointing I agree.
I helped out in a restaurant once and this regular customer always ordered whiting...used to scream at the owner if he didn't have it ready for her. Business requires alot of tongue biting...anyway Don who was very funny had run out of it again! and he was afraid of her and sick of her so he got some cod and got a steak tenderiser and was found bashing it in the kitchen until it was flat - then he got a red biro and painted little red dots on the back of it and served it up to her.
