Tonights's episode had Eva and the vicar coming out from Roy's Rolls noticed a shop next door which I hadn't seen before, what or who's is it!

Do you mean the empty shop that was formerly Ashley's butcher shop?
Preston's Petals is a florists shop that opened in January 2016 in the premises on Rosamund Street that had previously housed Barlow's Buys and Barlow's Bookies. Peter Barlow rents the premises to his adoptive half-sister Tracy Barlow.
Only a shot as it is a new business.
A Google Images search suggests that Roy's Rolls used to be in between D & S Hardware and Elliott & Son Butchers

I agree with viv, it's the drop in/community centre.
In real life no way would a bookmakers close and a florists shop open. Much more the other way round
