It was probably the Seven Samurai, the only film from that region of the world that seems to have penetrated the consciousness of Hollywood screenwriters.

I'm pretty sure it's Yojimbo by Kurosawa, but it's possible that it's Red Beard or Seven Samurai. One of the films in that trilogy, most likely yojimbo though.
