Elves - immortal or just simply, dont die of old age?

THe elves in lord of the rings are immortal. Yet they can die of grief or be slain. HOw is this immortal?

It would be more accurate to describe elves as "Unaging but mortal", as they can be killed. Although when elves die they go to Tol Eressa (sort of Heaven) and they can come back (unless they've been especially bad - Feanor isn't allowed to return, for example). And I've just exposed myself as a total Tolkien nerd!
It was my belief that Elves are not unchanging as such... that they merely age extremely slowly and that the symptons of aging can be aggravated by factors such as grief, pain or any extreme of emotion. Though no quotes spring to mind I should imagine that Maedhros, for example, aged pretty quickly up there of Thangorodrim.
