"Cover Up". It was about a bunch of spies whose cover was a male modelling agency.

I thought it was Remington Steele

Definitely "Cover Up". The agency in RS was actually a detective agency.

The main male lead Jon Erik Hexum accidentally killed himself with a gun loaded with blanks.

The American Football shown on Channel 4 (UK) in the 80s used it too.
