What was the point of bursting the balloons at the end? I must have missed the reason for it.

It was indeed to demonstrate that black balloons absorb light - they couldn't burst the white one until they drew a black blob on it.

It was part of Stephen's new 'jolly japes' section where he does a wee scientific experiment at the end. As stated, this one showed that black absorbs light while white reflects it.
