I have never bet on any of the shows but was wondering about what will happen with all the people that had bet on the ex-housemates who threw their tickets away once the housemate had been evicted only to discover that they have gone back in and have a chance of winning?

All bets are valid until the show ends,and a winner declared.
Anybody who wrote a betting slip,and has destroyed what turned out to be a winning bet, would simply have to go to the betting office where they placed the bet,and usually write it out again.
The staff would then check the writing against all the winning slips,and match the original.
Pete will win anyway so its all irrelevant.
