We just had a full service done on a car we have just bought...what exactly is checked when this is done.

The car should have a service booklet which lists the items for each service and is then signed, dated and stamped by the garage that does it.
A full service (every 10,000 - 12,000) should include the below. A minor or interim service will likely just check the oil, brakes, exhaust, battery and tyres

Oil and Oil Filter Replacement
Fluid Levels Check and Top Up
Brake Fluid
Anti-freeze Coolant
Windscreen Wash
Power Steering Fluid
Essential Checks
Lights

Windscreen Wipers
Battery Condition
Charging System
Exhaust Condition

Tyre Tread and Pressure
Full Brake Check
Steering Check
Shock Absorbers Check
Suspension Check

Auxiliary Drive Belt Check
