I have recently purchased a car with the log book missing, well there's bits and pieces. If the car is Insured and Taxed under my name, am I still able to drive it. Whilst I'm waiting for the DVLA to register it under my name?

of course you are.
Normally an insurance company will ask if you are the registered owner and keeper, which you aren't (yet).. if they asked you this and you said you were, there may be a grey area. Worth bearing in mind.
of course hes the owner and keeper, from the day he bought the car and sent the forms off.
The whole registration document isn't passed onto the buyer Ash, only a little part of it, which should be signed by the seller. Maybe it's hiding amongst the bits & bobs you say you have?

If not, I would imagine the person would have given you an invoice or at least a signed piece of paper to say that they've sold the vehicle to you. Either way, you can still drive the car if it's taxed, MOT'd (if nec) & insured in your name, whilst you're waiting for the new reg doc.

Hope I'm not teaching mother to suck eggs - just trying to help. Happy motoring.....
