Why do Scottish motorists display a flag of St Andrew with Scotland written in FRENCH (Ecosse)?! Why not Gaelic?

Probably because when they stick them on, they are going to France
Ecosse is the name of a company that specialises in tuning Peugeot cars, but is based in Scotland, I think, They probably give their stickers out free, was the one you saw on a Peugeot?

Ecurie Ecosse was a motor racing team formed in Scotland in the 1950's. They raced Jaguars with wins at Le Mans and many other races. I have seen the Ecurie Ecosse stickers on other cars since then. Perhaps they are motor racing fans.

It's all to do with the "Auld Alliance" when the Scots and the French waged war on the English. Nowadays it's just done to wind the Sassenachs up!
I've just been in my local Halfords and they've got TONS of them! And Wales stickers, and England ones!
Dunno who Halfords are hoping to sell Scottish and Welsh ones to - just how many cars are made in Scotland or Wales these days ?

Either way maybe it helps us Sassenachs to identify a potential death trap (in the words of your fellow kinswoman Ms Foulds Wood)!

Just in the same way that the MOT recently issued a new scheme to identify poor drivers in England by issuing flags, white with a red cross, signifying an inability to drive, which must be prominently displayed whilst driving around. Preferably a souped up Nova.

Its when you take your car to france. A frenchman is probably less likely to ram a scot off the road than an englishman.

People probably never get round to taking them off.
