I've had a look at the DVLA website and can't find a definitive answer. Also, I tried to search this site and didn't find anything.

I'm about to sell my motorbike. The insurance runs out soon and I don't plan to renew it, but it still has valid tax. It will be stored off-road and unused. Do I have to declare it SORN when it's no longer insured, or just when the tax runs out?
